Not sure why, but someone somewhere decided foods that involve scooping out the center of something and filling it with something else should be called boats. Which is why these tasty, handheld meals are pizza boats. Not pizza ships. Or pizza rafts, barges, dinghies or gondolas. Not even a pizza sloop (although that sounds like a great name for an internet dance meme). But no matter what you call them, these Cooper pizza boats are great when you need a quick and simple dinner recipe. And they just so happen to be cheesy and delicious to boot. And fun fact: Boot is German for boat.

INGREDIENTS

5-ounce bag mini pepperoni
14-ounce jar pizza sauce (reserve some sauce for dunking)
2 cups Cooper Sharp White or Yellow cheese, shredded
2 loaves French bread or baguettes
1 tablespoon fresh parsley, chopped (optional)

DIRECTIONS

Preheat oven broiler.

Place French bread loaf or baguette on a flat surface. Carefully carve out the top center of the bread to create a “boat.” Spread desired portion of pizza sauce within the hollowed middle of the bread. Layer some mini pepperoni over the sauce. Cover with Cooper Cheese. Add more pepperoni. Repeat for the second loaf.

Broil for 5-8 minutes, checking frequently to avoid burning. Remove from oven when the cheese is nice and melty and the pepperoni and bread begin to brown.

Serve with any remaining pizza sauce for dunking.
