Cooper Cheese French Toast and Egg Sandwich
INGREDIENTS2 cups milk
2 teaspoons vanilla
1 teaspoon cinnamon
8 medium-thick slices of bread (such as brioche or challah)
4 slices of fully cooked ham
8 slices Cooper Sharp White cheese
8 pieces bacon, cooked to a crisp
2 tablespoons butter
maple syrup (for dipping)
Combine milk, cinnamon, vanilla, and four of the eggs into a bowl. Beat well.
Melt 1 tablespoon of butter in a skillet on medium-high heat. One at a time, dunk your bread slices into the egg mixture, making sure to coat both sides. Place in a medium pan and cook for 2-3 minutes on each side. Remove browned bread slices from the pan and set aside.
In the same pan, melt 1 tablespoon of butter. One at a time, fry 4 eggs over easy. Remove them from the pan and set aside.
Fry the ham slices in a skillet for 1-2 minutes per side on low heat, until warm and a little crisp on the sides.
Place one of the fried eggs on a slice of French toast. Top the egg with 1 slice of ham and 2 slices of bacon. Cap the whole thing off with another slice of French toast. Repeat for the remaining sandwiches. The sandwiches can be warmed to melt the Cooper Cheese if desired. Pour yourself and your guests a dipping bowl of maple syrup.
Then prepare yourself. This could well be the most tasty breakfast you’ve had in quite some time, so savor the moment. Maybe even Instagram it.
