In 1893, banker I.C. Cooper walked away from his ledger and started making aged cheese in New York. By 1918, the Cooper cheese brand moved to Pennsylvania where it won the hearts (and tastebuds) of fans. Since then, Cooper has become known as a Philly icon and the cheese of choice for perfectly melty menu creations both in home and restaurant kitchens alike.
